Simple Chicken Soup Noodles

I chanced upon this recipe when I was scrolling through Bon Appetit videos on YouTube looking for inspiration for something simple to cook at home. It's so simple yet so flavourful - just the perfect recipe for a comfy, low effort home-cooked meal. This recipe takes about 2 hours in total from start to end, but most of it is just idle time for the soup to simmer and develop its flavour. I made some tweaks to the original recipe, making it simpler, and changed some of the ingredients more to my own liking, so feel free to experiment and make it your own!


Without further ado lets jump into the recipe :)

 

INGREDIENTS LIST (Serves 3-4)

3-4 medium to large carrots

1 large/2 medium yellow onions

2 whole garlic

4 potatoes

about 1kg chicken drumstick/thigh with bones

1 tbsp whole black peppercorns

dried dill and salt to taste

(feel free to add any other ingredients you want, preferably those that won't disintegrate after being cooked for 1-2 hrs)


STEP 1: Chicken Prep

Prepare the chicken by defrosting them first. Dry with kitchen towels before seasoning with salt (can be a little more generous as most of the salt will go into the soup later on). Place them aside for now.




 

STEP 2: Veggie Prep

De-skin and chop carrots and potatoes into big chunks (be careful not to "over-chop" the potatoes as they risk disintegrating into the soup if they are too small). Cut garlic once cross-wise into halves, and onion into quarters. Leave skin on as it gives additional flavour and colour to the soup.


 

STEP 3: POT

Throw veggies, chicken, peppercorns and dill into a HUGE pot, add about 3.5L of water and bring to a boil on high heat (takes about 20 mins in my experience). The bags and nets in the pics are for the aromatics which helps me to remove them with ease afterwards, but totally optional if you prefer leaving them in!


 

STEP 4: WAIT

After the pot comes to a boil, bring heat down to a simmer and let it cook for about an hour with the pot lid off. The soup should reduce by about 1-2 cm. Taste and season with salt.





 

STEP 5: Noodles!

Measure out about 700ml of soup and bring it to a boil in a smaller pot on another stove. Add pasta of your choice, and cook as per the recommended time stated on the packaging.





 

STEP 6: SERVE!!

Portion into 3 or 4 servings, add dill and pepper to taste, and enjoy!!
